The "North by North West" dining room has one of the most unique settings in the Highlands.
This beautiful room has a nautical theme with thousands of hand painted stars on the ceiling, zodiac fresco and seafaring charts. The main centrepiece, however, is a seven-foot hand gilded compass. Situated just a few feet away from where the river meets the sea, few restaurants can offer such a wonderful opportunity to observe seals, otters and a wide variety of birds whilst dining. During the summer months this room is transformed during the evening by the vivid colours of the glorious sunsets whilst in the winter months flickering candles reflect the gold leaf painted walls.
Chef Dan Hall has a wealth of experience having worked in top establishments world wide including positions in Napa Valley California, Sydney Australia, Andalucia Spain as well as being Head Chef on the Royal Scotsman and for Nick Nairn at Braeval and Nairn’s restaurants. Dan brings a modern approach to his cooking relying on an extensive number of local and national suppliers to provide him with a varied and interesting selection of produce. Seasonality is of paramount importance to his food as each new season brings its own fantastic bounty.
